What is the best chicken salad you have ever tried?

HI, my hubby has been stressed out for a while, needs some nice cooking. what is the best chicken salad recipe?

1. The best chicken salad I've ever had was made with all white meat chicken breast, chopped into bite sized pieces, chopped celery, chopped onion, chopped pecans, sliced grapes, and strange but true, a small can (maybe 1/4 a cup) of well drained crushed pineapple mixed with mayo, salt and pepper. Absolutely delish. Sounds a little strange, but the pineapple really made a difference. Just drain the pineapple relaly well though so it won't be runny.
2. I think Bob Evans makes a pretty good chicken salad--and my former neighbor made a chicken salad w/cream cheese and put this on bread slices --cut crusts off bread. These sandwiches were very,very good. Maybe I will check Cooks.com and see what I can find.
3. I have found this to be very tasty: Dice up your cooked chicken, add diced apple, dried cranberries, chopped pecans and diced celery. Add mayo (enough to your liking....I like a LOT of mayo in mine, but everyone's different) and serve the salad on a croissant. Deeeelish!!
4. My brother makes the most awesome chicken salad in the world!! He takes cooked boneless, skinless chicken breasts and roughly chops - not shredded, but small chunky pieces. He adds a little mayo, mustard, chopped celery, seedless grapes sliced in half & chopped walnuts or pecans. Season with a little Mrs. Dash & chill well before serving.........Yummy!!
