I just make a simple salad with lettuce, cucumbers, red onions, and whatever else you like, Grill up a couple of Boneless-skinless chicken breasts, cube those up, toss on some chinese crunchie noodles, and use that Soy-vay chinese chicken salad dressing, oh yeah, and some canned manderin oranges. 11. I get a lot of compliments on this recipe. Enjoy! Chinese Chicken Salad 2meaty chicken breasts, shredded 1hdiceberg lettuce 2-3stlkgreen onions, cut on the diagonal 3Tsliced almonds, toasted 1/4ccilantro, coarsely chopped 1Ttoasted sesame seeds 1/4pkgmaifun noodles For the Dressing: 1/8csesame oil 1/8cpeanut oil 2Tsugar 3Trice vinegar 1/2tsalt 1/8tpepper The secret is in the chicken and the lettuce. If you cook the chicken with a little teriyaki sauce, it adds a little zing to the salad. The lettuce should be cut (not torn) into 1/4-inch strips. If they’re too long to eat gracefully then cut them into two or three pieces. Slice the green onions on the diagonal (both the white and green parts), toasted the sliced almonds, clean, pick and chop the cilantro; and toast the sesame seeds until they turn golden brown and start popping. Deep fry the Maifun noodles and drain in a paper towel lined bowl. Combine all ingredients for the dressing in a bottle that you can shake well. Just before serving, mix the dressing with the salad ingredients, then fold in the rice noodles carefully. If you pour the dressing on the noodles, it will get soggy right away. If you’re serving this for a large party or buffet, it’s better to prepare a few small batches so your guests will get fresh noodles and greens rather than wilted and soggy ingredients.
  12. Chop up leftover chicken into cubes. Add about 2 cups mayo (you may need more depending on how much chicken you use). Boil 4 eggs. When the eggs are done boiling I mash them down to size and add them in with the Chicken & the mayo. I then add cut up celery & onions. I add a half a bag of Dole dry Cole Slaw. Mix. It's delicious
